Perfect Earth Organic Rice Pasta Puttanesca by @agar_agar_cook

There are time when we just want a simple tomato-based, meatless pasta. I’ll turn to my next fav PASTA PUTTANESCA, it basically uses mostly pantry ingredients – canned tomatoes, olive oil, anchovies, capers, olives and garlic, that’s it but it tastes VERY umami😱.
Today, instead of the usual spaghetti, I’m using @foreveryoungsingapore black rice pasta. It’s certified organic by USDA Organic and ECOCERT. It is also Gluten-free, Allergen free, GMO-free, suitable for Vegan, and also Kosher Certified.
INGREDIENTS (serves 3)
☘️3/4 pack black rice pasta
☘️1 tbsp olive oil
☘️3 cloves garlic (sliced)
☘️1 can plum tomato
☘️1 tbsp black olives (roughly chopped)
☘️1 tsp capers
☘️3-4 slices of anchovies
☘️1 1/2 tsp sugar
☘️1 ladle of pasta water
☘️Optional: herbs (fresh parsley or basil), shredded cheese and chilli flakes
METHOD:
☘️Boil a pot of water, salt it generously. Cook the pasta for approx 5-6mins.
☘️Heat up the pan. Drizzle olive oil and stir in the garlic.
☘️Add in anchovies and capers. Once anchovies melted, mix in the tomatoes, olives, sugar and pasta water.
☘️Let it simmer for 10 mins. Taste and season accordingly.
☘️Stir in the drained pasta. Sprinkle shredded cheese and fresh herbs. Serve warm!
