Oyako Donburi

Oyako Donburi is the classic soul food of Japan, the literal translation of Oyakodon (親子丼) means “parent-and-child rice bowl.” Chicken (as in parent), egg (as in child), and onions are simmered together in a dashi and soy sauce-based broth then served on top of steamed rice. Ingredients
400g short-grain white rice (cooked)
475ml water
100g chicken breast or thigh, boned
4 leeks or spring onions
Half of an onion, sliced
4 dried mushrooms, reconstituted
700ml Dashi
120ml soy sauce
2Tbsp The Australian Carob Co Organic Carob Syrup
4 eggs
Instructions:
- Combined Dashi, soy sauce and Carob Syrup together
- Divide the ingredient into 4 portions
- Add oil to the frying pan, fry the onions until fragrant
- Add mushroom and chicken, after 2 minutes add a quarter of the dashi broth, bring up to a boil and simmer for 5 minutes
- Lightly mix the eggs and slowly pour into the pan
- Once the egg lightly cooked, add the leek and transfer over the rice
- Serve while it hot and enjoy.
